Hailing from the beautiful towns of Saint-Quentin and Kedgwick in New Brunswick, Canada, we have a deep connection to the rich maple syrup heritage of our province. Saint-Quentin, known as the maple capital of Atlantic Canada, has a long-standing tradition of producing exquisite maple syrup. Today, New Brunswick stands as the second largest maple producer in Canada and the third largest in the world.
Growing up in Saint-Quentin and Kedgwick, maple syrup was an integral part of our lives. It adorned our kitchen table for every meal, becoming a cherished staple we simply couldn't live without. In 2006, we moved to Alberta for a job opportunity, only to realize that the absence of maple trees posed a challenge in finding non-industrialized maple syrup. The golden maple syrup found in grocery stores couldn't compare to the dark, caramelized flavor we grew up loving.
Maple syrup has always been a cherished part of our breakfast ritual. My mother would lovingly drizzle it over our pancakes, providing a sweet start to our day. However, we realized that the syrup we were consuming was laden with processed sugars and artificial flavors, which was a contradiction to our pursuit of a healthy morning meal.
This realization prompted the birth of Little Ouest Maple TAPS. We took it upon ourselves to go back to basics, using all-natural and traditional methods to produce the finest maple syrup, while preserving all its nutritional benefits.

The sap tends to have higher water content and milder flavor compared to later weeks. During this harvest the syrup may have a lighter color and more subtle maple taste.
The sap sugar content gradually increases , the flavor profile of the Syrup becomes richer and more pronounced with a darker colour and increased the sweetness.
Because of the sap sugar content tends to be higher , this creates extended boiling process leading to a more robust and pronounces maple flavor with a stronger aroma.
Yes to general demand , we crafted an excellent Smoke maple syrup , no chemicals or special liquids to produce this , we only use smoke from are wood fire evaporator then we proceed to infuse in the final product. This product was a favorite this year.
